CMake 3.27 deprecates compatibility with CMake < 3.5. Update tests that
do not cover older interfaces to avoid the deprecation warning.
Follow the pattern from:

Also remove explicit `cmake_policy` settings made redundant by the
version.
GCC mistakenly issues the pedantic warning "ISO C forbids conversion of
function pointer to object pointer type". With -pedantic-errors in the
compile flags, that diagnostic prevents check_symbol_exists() from
detecting function symbols.
The solution is to filter out -pedantic-errors (and -Werror, just to be
future proof) before invoking try_compile().

Ancient versions of CMake required else(), endif(), and similar block
termination commands to have arguments matching the command starting the
block. This is no longer the preferred style.
