FindRuby: Remove documentation for non-existent Ruby_ROOT_DIR

Documentation was added by commit 905d5667e8 (FindRuby: Add support for
RVM installations, 2020-03-23, v3.18.0-rc1~497^2), but this feature was
never implemented.

Closes: #21528
